So, maybe this is cheating a little bit, but I LOVE sharing recipes and I’ve missed sharing those things with you this month! Plus, I made this AMAZING Potato-Crusted Chicken Fingers made from potato chips!! So, if you have too many potato chips lying around, you can make this dish!
Potato-Crusted Chicken Fingers
- 6 ounces baked potato chips – 3/4 cup all-purpose flour – 1/2 cup 2% reduced-fat milk (I used skim) – 1 large egg, lightly beaten – 4 (6-ounce) skinless, boneless chicken breast halves, cut into strips – 1/2 teaspoon salt (I didn’t add any salt) - 3 tablespoons canola oil, divided
Grind chips in food processor (I actually used more than 6 oz, it was closer to 8 oz) and place in shallow dish. Add the flour and mix. Combine milk and egg in another shallow dish.

Today I would like to highlight what a good friend of mine has done for her table’s centerpiece. Maybe this will inspire you in some way!
She had an idea to fill mason jars with acorns, but when she and her son went looking around their neighborhood they didn’t find too many acorns. Instead, she opted for buying peanuts (still a cheap alternative)!
She just put a votive on top of the peanuts within the mason jar. I also the love the touch of burlap she placed under the mason jar!

This month of October is going by really fast!! I am LOVING this fall season! Unfortunately, I don’t seem to have time to enjoy it all or make as many of the cute crafts as I would like to. This week/weekend has been crazy for us: getting back into routine after a vacation + my husband has been running lights for a show at the University.

Today I’ve got just a small, very EASY new use for binder clips!!
I bought 6 at Walmart for under $2. I would show you how well the green in them matches my desk decor, but it’s so messy right now. Sorry.
Anyway I used them to display a few wallet size pictures I had!! (Picture is of my youngest sister a few years ago and my grandparents!)

Isn’t it amazing how when you see projects online, sometimes they make it look so easy? This one is from Grey Luster Girl. I won’t lie – this one was a little bit harder for me than I originally thought it would be.
This IS a really super cute idea. I’ll tell you how to make it!
