Hello everyone! This week I wanted to highlight Pendleton’s Country Market and my trip to their Butterfly Bio-Villa.

About Pendleton’s Country Market

Pendleton’s is a local family farm that started about 40 years ago. I love to visit the Pendleton’s booth at Lawrence’s Farmer’s Market as well as just driving out. It is located less than 2 miles east of Lawrence on K-10.

I am an Elementary teacher by training, but right now I’m FULLY enjoying my life as a piano teacher and private tutor! I love my husband to death (who just graduated with a B.S. in Theater, Culture, & Society). He makes me laugh often. We are opposites in many ways, but complement each other so well!

Menu Planning Monday: Using Pantry Items and Produce on Sale

Tuscan Tomato Soup

We’ve been eating out of the pantry and freezer this month. There are a couple of reasons:

 

1) We had lots of leftovers from the holidays.

2) We were low on money for groceries this month.

3) We wanted to clean out the pantry and freezer to make room for a healthier diet.

 

I’m really excited about this week’s menu plan, because it uses mainly pantry items and produce on sale this week! (I used The Prudent Homemaker’s Strictly Pantry Menu as an inspiration for most of this menu!)

 

Tuscan Tomato Soup

 

Monday

Breakfast: Oatmeal with brown sugar and Homemade Whole-Wheat toast

Lunch: Tuscan Tomato Bread Soup

Dinner: Baked Potato Soup from our freezer with canned pears and green beans

 

Tuesday

Breakfast: Homemade Whole-Wheat Waffles OR

Nonfat Yogurt with Homemade Granola

Lunch: leftover soup from Monday or Tuesday with Fruit

Menu Plan Monday: Freezer and Pantry Meals

For now, I’m putting the Volumetrics diet on hold, while I clear out my pantry and freezer items. At the same time, I am using some meal ideas from the Volumetrics book (especially breakfast and lunch). We’ve been trying to have more vegetables and fruit with each meal. Here are some of the meals we enjoyed last week:

 

Breakfasts:

We pick one of the below items and have it with fruit, and coffee or tea:

Homemade Freezer Waffles

- 1 1/3 c. oatmeal, prepared with water, 1 tsp. cinnamon, 2 tsp. brown sugar

- 3/4 c. nonfat plain yogurt with 2 Tbl. Crockpot Granola, 2 tsp. honey, 3/4 c. orange juice

- Smoothie with 1 piece of whole wheat toast (1 tsp. butter), instead of fruit

 

Lunches:
