Menu Plan Monday: Holiday Meals

I know it’s been awhile since I’ve shared our menu or the recipes we’ve been enjoying. I’m going to try to share our menu plan about once a month. Here is what we’ve been enjoying lately:

Menu Plan

During Thanksgiving Week, we enjoyed:

Baked Chicken Pasta (I doubled the recipe and froze half of it)

Southwest Chicken Crock Pot Soup

Chicken Potpie Bowls

Pizza Salad

For the Thanksgiving meals I cooked:

Pioneer Woman’s creamy mashed potatoes

Maple Ginger Roasted Vegetables with Pecans (on the right)

low sugar cranberry sauce

skinny pumpkin pie

Meals this week:

Monday: Italian Antipasto Salad

Tuesday: Chicken Cordon Bleu (crockpot)

Wednesday: leftovers

Thursday: Easy Oven Chicken Fajitas (double and freeze half)

Friday: Slow Cooker Pot Roast

Freezer cooking with Meatless Monday

Freeze Ahead Lasagna

At the beginning of this month I joined in with another friend and did of bunch of freezer cooking. She was more ambitious and planned out a month’s work of cooking – I was only able to do two weeks worth. I actually did it all in one day, but I would advise menu planning and shopping on a separate day from all your chopping and cooking up.

In the spirit of Meatless Monday (as I mentioned last time) – several of the recipes I used were meatless. In fact, for all my meals I ONLY purchased about 2 lbs. of chicken and 2 lbs. of ground beef. That’s saving money!

Meal Planning: Meatless Monday

Hello all!! My posts have been pretty sporadic as of late. Throughout the summer I wanted to take a little blogging break, plus having a little one around – it really does take a lot of my time up! I feel like I spent so much time around the kitchen table or just in the kitchen, while my little one eats and eats and eats. He is a slower eater, which is actually a good thing in the long run, but it’s time consuming right now.

I used to post my menu plan weekly, on Mondays. I’m not QUITE going to get back into doing that, but I do want to start posting about Meatless Mondays. This fall, in efforts to help us put money aside and pay off student loans, I’m going to plan about 2 meals a week which are Meatless (which saves money – Meat=expensive!) and

Menu Plan Monday: Week of Sept. 9th, 2013

Menu Plan

Nothing much has changed in my breakfast and lunch options. For breakfast we have cold cereal, homemade Egg McMuffin with Homemade Bagels, or fruit smoothies. For lunch we have leftovers on most days.

Dinners

Monday: Mini Meatball Sliders with Pesto (didn’t get to this last week)

Tuesday: Crockpot Sante Fe Chicken

Wednesday: Tacos (using freezer homemade Taco meat)

Thursday: Hamburgers & Grilled Corn

Friday: homemade pizza – cream cheese sauce with pepperoni, green peppers, and tomatoes

Saturday: volunteering at a BBQ!

Sunday: leftovers

Last week I did some freezer cooking, so this week is a little bit of an easier week! (I plan on putting together freezer meals every 2-3 weeks).

Menu Plan Monday & Homemade Bagels

Homemade Bagels

So it’s been awhile since I’ve written a Menu Plan Monday (being pregnant, then a new mom takes a lot out of you!). I want to get back into the practice of Menu Planning and sharing it with you all. Of course, taking care of a 6 week old is priority – and that is why Menu Plan Monday is arriving on a Tuesday this week! (That, and my husband had yesterday off, so it was a fun family day.)

 

 

Before I gave birth to Ain I made two weeks worth of freezer meals. We are still enjoying some of those! I want to keep up with the freezer cooking, so about every 2-3 weeks I’m going to do some freezer cooking on Saturday. That’s what I did this last Saturday and yesterday morning. Menu Plan Monday: Week of March 25th & Pasta Primavera

It’s been awhile since I posted a Menu Plan, sorry. With my pregnancy being further along I’m focusing more on prepping for a baby and getting the nursery ready. I’ve still come up with a menu most weeks (but usually not until Tuesdays).

Menu Plan

Monday: Homemade Bread Bowls with Broccoli Cheddar Soup (I’m made it once, but I’m trying out the recipe again. I’ll post the bread bowl recipe later.)

Tuesday: Pasta Primevera (recipe below)

Wednesday: Chef’s Salad

Thursday: Grilling Hamburger’s (or leftovers)

Friday: Passover meal at our church
