Easy Coconut Date Rolls

These are so easy to make and delicious!! Best part about it? No need to add sugar. I definitely crave sweet things, so I like when I can enjoy eating something sweet without worrying about the amount of refined sugar in it. Second best thing? These only require 3 ingredients!!

Coconut Date Rolls 10 oz. pitted dates 1 cup slivered almonds (roasted – optional) 1 cup unsweetened dried coconut flakes (reserve some for rolling) To Make:

Making these Easy Coconut Date Rolls is as easy as 1-2-3!!

1) Put all the ingredients in a food processor.

Blend ingredients until a paste is formed. If it looks a little dry, just add a smallest splash of water.

2) Form into heaping tablespoons and roll. 3) Roll balls in the dried coconut.

Top with a slivered almond, if desired! Makes 15-20 rolls.

Menu Plan Monday & Homemade Bagels

Homemade Bagels

So it’s been awhile since I’ve written a Menu Plan Monday (being pregnant, then a new mom takes a lot out of you!). I want to get back into the practice of Menu Planning and sharing it with you all. Of course, taking care of a 6 week old is priority – and that is why Menu Plan Monday is arriving on a Tuesday this week! (That, and my husband had yesterday off, so it was a fun family day.)

 

 

Before I gave birth to Ain I made two weeks worth of freezer meals. We are still enjoying some of those! I want to keep up with the freezer cooking, so about every 2-3 weeks I’m going to do some freezer cooking on Saturday. That’s what I did this last Saturday and yesterday morning. It’s been awhile since I posted a Menu Plan, sorry. With my pregnancy being further along I’m focusing more on prepping for a baby and getting the nursery ready. I’ve still come up with a menu most weeks (but usually not until Tuesdays).

Menu Plan

Monday: Homemade Bread Bowls with Broccoli Cheddar Soup (I’m made it once, but I’m trying out the recipe again. I’ll post the bread bowl recipe later.)

This week’s menu is rather simple, since we have a LOT going on. We are going to be gone several of the nights.

Menu Plan

Monday: Taco Soup (recipe below)

Tuesday: Dinner with friends

Wednesday: Work dinner

Thursday: leftovers

Friday: out to eat

Saturday: Eggs and Waffles

Sunday: Homemade pizza

 

This soup was amazingly tasty!! I think it’s the Ranch dressing mix that really added great flavor!

Taco Soup 1 lb. lean ground beef 1 package Ranch dressing mix 1 package reduced sodium Taco seasoning mix 2 cans chili beans (15 oz.) 1 bag of frozen corn (12-16 oz.) 1 can diced tomatoes and green chilies (15 oz.) 2 can stewed tomatoes (16 oz.) 2 cups water (you can vary this for thinner/thicker soup)

 

In a dutch oven, heat the lean ground beef until cooked thoroughly.

Menu Plan Monday: Week of Jan. 14th & 7-minute pregnancy breakfast

Easy 7-min. Pregnancy Breakfast

I’ve been telling you that since beginning this 2nd trimester I’ve been a LOT hungrier, especially in the mornings. I’ve been eating 2 breakfasts because I just get really hungry so fast after my serving of Homemade Granola and yogurt in the mornings. Last week I started teaching again and I needed a breakfast that would be quick and would keep me full longer. I came up with a recipe that I’m going to try most mornings to make. It’s so easy, and eggs are a pregnancy power food.

 

 

Ingredients

- 2-3 eggs

- thinly sliced red onions

- garlic powder

Menu Plan Monday: Week of Christmas parties!

I know I didn’t post our menu plan last week – sorry! Our favorite meal was the Taco Pizza my husband envisioned: Refried Beans as the sauce, cheddar and mozzarella cheese, ground hamburger with taco seasoning, black olives, tomatoes (which we added to the pizza when we were halfway through cooking it), and shredded lettuce (added after taking out of oven). So good!!

Quick Chicken Parmesan from Eating Well

Monday: Costco hotdogs (we are shopping at Costco and just grabbing dinner there – $1.50 for a meal each!)

Tuesday: Spaghetti
