For now, I’m putting the Volumetrics diet on hold, while I clear out my pantry and freezer items. At the same time, I am using some meal ideas from the Volumetrics book (especially breakfast and lunch). We’ve been trying to have more vegetables and fruit with each meal. Here are some of the meals we enjoyed last week:
Breakfasts:
We pick one of the below items and have it with fruit, and coffee or tea:
- 1 1/3 c. oatmeal, prepared with water, 1 tsp. cinnamon, 2 tsp. brown sugar
- 3/4 c. nonfat plain yogurt with 2 Tbl. Crockpot Granola, 2 tsp. honey, 3/4 c. orange juice
- Smoothie with 1 piece of whole wheat toast (1 tsp. butter), instead of fruit
Lunches:
Baked Potato with Broccoli and Cheese and a side of fruit (we’ve had this lunch a lot):
- Top 1 baked potato with 1 tsp. butter, 1 c. broccoli, and 1/4 c. reduced-fat Cheddar cheese
Soup with whole wheat toast
Leftovers (with fruit)
Dinners:
Roasted Sausage, Potatoes and Veggies
Cheesy Italian Meatballs & Marinara Sauce (I had made this earlier and had a pan of meatballs in my freezer)
Bean and Pasta Soup (I had many of these items in my pantry)
Crockpot Chili (Again, most of these items I had in my pantry, except cheddar cheese I have in my freezer already shredded in zip lock bags)

The baked potato sounds really yummy. We have been getting a little bored with our usual lunch routine and I need to mix it up. this might be just the ticket!

We often times have baked potatoes for dinner. Adding such items as avacado, tomatoes, green onion, grilled mushrooms, broccoli, cheese. YUM!
MMMM – that sounds good. I love avacado!
