This month we have been trying to do the Once a Month Grocery Shopping Budget plan. This is the last week of the month. Last week, since I spent $16 on groceries (so I could buy milk to last 2 weeks), I only have $14 to spent this week. I’m going shopping today!
Favorite Meal Last Week: Leftover Chili Potatoes!
My menu is going to look pretty similar to last week’s (because we didn’t get to all the meals).
Menu Plan
Monday/Tuesday
Lunch: Tuscan Tomato Bread Soup & Sandwich with Italian Bread
Dinner: Braised Chicken Gumbo
Wednesday/Thursday
Lunch: Taco Salad, 1 fruit-flavored sugar-free yogurt, 1 piece of fruit
Taco Salad
Step 1: In a microwave-safe bowl, stir together 1 c. black beans, 4 Tbl. salsa, 1 tsp. ground cumin and microwave on high for 40 seconds.
Step 2: Arrange 24 baked tortilla chips on two separate plates, top each with 1/4 c. reduced-fat Cheddar cheese and microwave on high for 30 seconds.
Step 3: Top chips and cheese with half of black bean mixture on each plate. Then add 2 c. lettuce, 1/2 tomato(chopped), 1/2 c. salsa, 2 Tbl. fat-free sour cream to each plate.
Serves 2.
Dinner: Spaghetti & Bread
Friday
Lunch: Bean & Cheese Freezer Burritos
Dinner: leftovers
Saturday/Sunday
Lunch: Quesadillas
Dinner: Homemade Whole-Wheat Waffles

I’ve decided to break down all my goals for 2012 into manageable bite size weekly goals. Each Monday I will plan on blogging about my 10 Weekly Goals – how I did and giving my new goals for the week. Last week I listed these goals:

2. Declutter project week 4 – finish office & start basement - we didn’t get to this.
3. Put some items on Craigslist
4. Freezer cooking – waffles & banana bread
5. Calculate cost for recipes (maybe calculate the cost of 3-5?) - I started on this by creating an excel file and typing in prices I’ve found in the grocery store for ingredients.
Personal Goals
6. Continue Couch to 5K with husband – Week 4!
7. Read 7-10 chapters of the Old Testament
8. Read 2 chapters in the Resolutions for Women study
Blogging Goals
9. Set up a “recipes” section to my blog - not yet…
10. Promote the Spring Is Here Pinterest Party
