Menu Planning Monday: Week of 12/12 + Waffle Cookies!

Whew! We had a busy weekend and FUN weekend! My husband was in a show at the University and this last weekend was their final performances.We hosted a cast Christmas party – so much fun and the cast was SO appreciative!

It’s nice to host a party for a bunch of college students – they are easily impressed by us having over 1200 square feet, so many Christmas decorations up, and great food. We do NOT have a grand house, gorgeous Christmas decorations, and a TON of food, but I am definitely thankful for what we have!!!

 

 

We had a table of treats upstairs and….

 

…also in the basement. I would say the favorite recipes were the Peppermint Popcorn Bark, the Pool family Cream Cheese dip (not sure if I have permission to give the recipe out), Tequila Grapefruit Splash, and these amazing Oatmeal Chocolate Chip Waffle Cookies (recipe below)!!

 

Oatmeal Chocolate Chip Waffle Cookies

1/2 cup (1 stick) unsalted butter, melted
1/2 cup plus 2 Tbs. firmly packed light brown sugar
2 large eggs
1 tsp. vanilla extract
3/4 cup unbleached all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1-1/2 cups old-fashioned rolled oats (not instant)
1 cup semisweet chocolate chips
Nonstick cooking spray

Preparation

In a large bowl, whisk together all the wet ingredients. Then, stir in flour, baking soda and salt. Stir in oats and chocolate chips. Coat the grids of the waffle iron with a nonstick cooking spray.

Now you can either put aside dough (in refrigerator) to bake fresh later, or cook them up now!

Heat the waffle iron. Using a Tablespoon or 1/4 cup (depending on what size of cookies you want), scoop the dough to portion out a cookie onto each waffle square. Close the iron and cook and until cookie is set and beginning to brown, 1-1/2 to 3 minutes, depending on the heat of your waffle iron. Transfer the cooked cookies to a wire rack and repeat with the remaining dough.

I thought this recipe was PERFECT for a party. I just cooked up 4-6 cookies at a time, so that they would be fresh and warm when people wanted them. They were a HIT!!

Wednesday: Brisket Sloppy Joes (using the leftovers from last week)

Thursday: leftovers

Friday: Minestrone Soup

Saturday: Couple’s Christmas party – we are bringing wine!

Sunday: Beef and Bean Chimichangas (I’m doubling the recipe and freezing half of it.)
