I made Crockpot Granola this week and LOVED it!! I got the recipe from A Year of Slow Cooking, though I definitely didn’t need to cook the granola in the crockpot as long as she did (maybe mine is hotter?). This is the recipe below, with my modifications.
Crockpot Granola
Dry:
- 5 cups oats
- 1 T flax seeds
- 1/4 cup slivered almonds
- 1/4 cup raw pumpkin seeds
- 1/4 cup raw sunflower seeds
- 1/4 cup unsweetened coconut
- 1/2 cup dried fruit (I used raisins and some dehydrated pineapple)
Wet:
- 1/2 cup melted butter
- 1/2 cup honey
Put all the dry ingredients in the crockpot. Toss a couple of times to mix. Add in the melted butter and honey, then mix well.
Cover, but vent with a chopstick. Cook on high for 2-4 hours, depending on how hot your crockpot is. Stir frequently (every 30 minutes) and also check to see how dry the granola is. If you smell it cooking, then go stir it – you definitely want to keep an eye on it. Since mine granola did get a little crispier than I intended, I may even use the low setting next time!

Sunday: Beef and Bean Chimichangas (I’m doubling the recipe and freezing half of it.)

sandwiches with Homemade Amish White Bread
Breakfasts
Apple Cinnamon Baked Oatmeal (awesome, easy recipe!)
oatmeal with dehydrated apples
cold cereal
