One of our favorite meals last week was a salad we cooked up on the spur of the moment. We had extra zucchini on hand and my husband suggested we grill them. (Ever since acquiring a gas grill, we’ve been using it more!) So we grilled the zucchini and red onion. Simple, but it was so good!!
Menu Plan
Monday/Tuesday
Lunch: Light & Fresh Vegetable Soup & Sandwich:
- 2 slices whole-wheat bread, 4 slices deli-thin lean smoked turkey breast, 2 pieces lettuce, 3 slices tomato, 1 Tbl. alfalfa sprouts, 1 oz. reduced-fat Cheddar cheese, 2 tsp. mustard
Dinner: Chili & Salad
Wednesday/Thursday
Lunch: Baked Potato with Broccoli & cheese & Spinach Salad
Dinner: Spaghetti & Bread
Friday
Lunch: Bean & Cheese Freezer Burritos
Dinner: BBQ Yardbird Pizza (recipe next week!)
Saturday/Sunday
Lunch: Tuscan Tomato Bread Soup & Sandwich:
Dinner: Wine & Tomato Braised Chicken

10 Goals for this Week
I’ve decided to break down all my goals for 2012 into manageable bite size weekly goals. Each Monday I will plan on blogging about my 10 Weekly Goals – how I did and giving my new goals for the week. Last week I listed these goals:
Wife/Marriage Goals
1. Ask my husband daily: “Is there anything I can do for you today?”
Home Management Goals
2. Declutter project week 3 – office & basement - This process has gone slower than I envisioned, but I’m still happy with the progress we are making!
3. Finish Spring Wreath - I showed off this Spring Moss Wreath last Tuesday.
4. Calculate cost for recipes (maybe calculate the cost of 5?) - I did not get to this.
Personal Goals
5. Find a doctor and set up an appointment
6. Continue Couch to 5K with husband – Week 4!
7. Read 7-10 chapters of the Old Testament
8. Read 2 chapters in the Resolutions for Women study
Blogging Goals
9. Set up a “recipes” section to my blog - Not yet, but I want to really soon!
10. Promote the Spring Is Here Pinterest Party

Love your weekly goals. I’m so jealous of your couch to 5k. I tried doing it earlierthis year but got terrible shin splints. I haven’t been able to run in almost two years. How sad is that?! You’re so lucky to have your husband doing it with you. I can’t get my husband to do anything. He’s so lazy lol.

Yes, I’m very excited my husband is doing it with me. Ordinarily, he might not agree to running (he hates it), but when I was doing the 30 Day Shred video (it took me four attempts to make it all 30 Days for that!!) I asked him if he would agree to do the Couch 2 5K program with me as a reward for me doing 30 Days of exercising with the 30 Day Shred and he agreed!!
I love to grill once the weather gets warm. There is nothing like grilled veggies! Have you tried grilling fruit yet? So yummy!

No, we haven’t. What fruit have you grilled? I can see pineapple and apple being good, but I’m not sure about strawberries or oranges.
Admirable goals, I should do something like that. Your salad looks so delicious, little better than fresh veggies simply prepared. How is the bread soup? I drown bread in spaghetti sauce, is it anything like that?

Yes, my husband and I enjoyed the grilled veggies much more than fresh veggies on salad. (We’ve been having salad a lot lately, so it was good to change it up.) The bread soup is VERY good!! Yes, I always love having bread with my spaghetti sauce. I love that combination. I’m so glad you stopped by! I’ll have to check your blog out!
The grilled veggie salad is gorgeous, as is the sandwich. Posting your weekly goals is a great way to stay accountable–I *soooo* don’t have the courage or discipline to do that!! Have a blessed week and thanks for sharing!

Maybe instead of posting goals for all areas of your life, start with just one – the easiest. Post 2-3 goals you have for that area each week. I love to do it because it keeps me accountable. So start small!!
