Hello everyone! Hope you had a great weekend! I spend some time over the weekend planning out Valentine’s Day ideas, working out my priories, and making a detailed schedule so I can more intentionally map out my time (post on that to come later).
With my husband directing a show in March (i.e. rehearsals nearly every night), I’ve had to make some temporary changes to our menu plan. Most evenings for dinner it will either be a crockpot meal he can eat before he leaves (and before I get home) or leftovers. With everything else that’s gone on this weekend, I haven’t really planned out all the lunches this week.
Breakfast: Cold cereal with Homemade Granola
Dinner: leftover Pizza and salad with canned pears
Breakfast: Homemade Whole-Wheat Waffles
Dinner: Crockpot Lasagna
Breakfast: Loaded Scrambled Eggs
Lunch: Spanish Rice with corn
Dinner: at the Morsches’
Breakfast: Apple Cinnamon Baked Oatmeal (awesome, easy recipe!)
Dinner: Crockpot Meat Loaf
Breakfast: Homemade English Muffins
Breakfast: Banana Bread made with some whole-wheat flour and cold cereal
Dinner: Chicken and Rice Soup with French bread
Lunch: Baked Potato with broccoli and cheese and side of fruit
- Top 1 baked potato with 1 tsp. butter, 1 c. broccoli, and 1/4 c. reduced-fat Cheddar cheese
Dinner: Stir-Fry challenge – make a stir fry meal from whatever we have in the pantry/freezer with salad
Favorite Meal from Last Week:
Personal Pan Pizzas using Homemade Chapatis as the crust (we loved them so much last week, we had to have some more this week!
Personal Pan Pizzas
To make 8 homemade chapatis:
- 1 1/2 cups whole wheat flour
- 1/2 tsp salt
- 3/4 cup of warm water
Combine salt and flour in a mixing bowl. Pour water in and mix.
Knead the dough for 10 minutes, then form into a ball. Place in a bowl, covered with a damp cloth and let rise in a warm place for 20 minutes.
On a well-floured surface, divide the dough into 8 portions. Roll each portion in a ball, then us a rolling pin to roll each ball into a flat circle 5-6 inches across.
Place a large skillet or griddle on medium heat. Place a chapatis on the skillet.
(Normally when just cooking chapatis, it will start to puff up. When it is done puffing, you will flip it to the other side to cook. They cook quickly; you will need to watch them so they don’t burn.)
For the pizzas, however, as soon as you place the chapatis on the skillet, add tomato sauce and whatever ingredients you want on your pizza!
