Menu Plan Monday: Week of September 10th & Asian Grilled Chicken salad

Wow – you can definitely tell Fall came to Kansas three days ago!! We have had lows in the 40s and 50s overnight and temperature no higher than 82.

There has been a cool breeze everyday, so we’ve had the windows open constantly. It’s so nice!! (This week we should clean the windows.)

However, with the windows open, I’ve either had my allergies bothering me, or I’m developing a cold. We’ll have to see later today which it is. But it’s worth having fresh air in the house, right?

Breakfasts

Easy DIY Yogurt

Healthy Granola

Whole Wheat Berry Waffles

I finally bought milk, so we can have cereal as well.

Lunches

Sandwiches with Homemade Whole Wheat Bread

Asian Grilled Chicken Salad (recipe below – I love all the crunch on this salad!)

 

Dinners

Monday – Bean & Pasta Soup (we are not adding the beef)

Tuesday – leftover Pizza

Wednesday – Jagerschnitzel

Thursday – leftover Pizza

Friday – Stir-Fry

Saturday – Deep Dish Pizzas

Sunday –  Minestrone Soup

Asian Grilled Chicken Salad with Lime Dressing

This makes SO MANY servings – maybe 12-15

Ingredients

2 pounds of boneless, skinless chicken (can use leftover grilled chicken)
1 medium red cabbage, cored & thinly chopped
2 red bell peppers, thinly sliced
1 head of romaine lettuce, torn into pieces
1 head of iceberg lettuce, torn into pieces
green onions, thinly sliced (optional)

Optional crunchy items for salad

1 cup cashews
1 cup broken ramen noodles
1 cup chow mein noodles
1 cup sunflower seeds

Lime Dressing

1/2 cup fresh lime juice (4-5 limes)
1/2 cup vegetable or olive oil
1-2 tablespoons honey for taste
garlic power, salt & pepper added to taste

Preparation

1. If you don’t have any leftover grilled chicken, then cook chicken in a skillet, adding some Mrs. Dash
2. Toss together salad ingredients, except the chicken.
3. Combine ingredients for the lime dressing.
4. Set up optional ingredients as a “salad bar”, for each person to add in what they like.

 

This is a great leftover meal!! I just keep the chicken and crunchy ingredients separated from the salad.
