Good morning everyone!
Can you believe that I’ve been posting my menu plan on this website since July 11th of last year? A year of menu planning. I have not been linking up to Organizing Junkie’s Menu Plan all that time, but since I have I really enjoyed checking out what other people are cooking. I’ve gotten a lot of great menu ideas!!
Menu Plan
Monday
Lunch: Taco Salad (serves 2)
Step 1: In a microwave-safe bowl, stir together 1 c. black beans, 4 Tbl. salsa, 1 tsp. ground cumin and microwave on high for 40 seconds.
Step 2: Arrange 24 baked tortilla chips on two separate plates, top each with 1/4 c. reduced-fat Cheddar cheese and microwave on high for 30 seconds.
Step 3: Top chips and cheese with half of black bean mixture on each plate. Then add 2 c. lettuce, 1/2 tomato(chopped), 1/2 c. salsa, 2 Tbl. fat-free sour cream to each plate.
Dinner: Tijuana Tortas (from Eating Well)
Tuesday
Lunch: Salad with Grilled Veggies
Dinner: leftover Pizza
Wednesday
Lunch: Volumetrics Burger with Creamy & Crunchy Potato Salad
Dinner: Chef’s Salad & Homemade Humus (recipes coming soon!)
Thursday
Lunch: Crispy Chicken Tostadas
Dinner: Sweet & Sour Drumsticks
Friday
Lunch: Chef’s Salad & Homemade Humus
Dinner: Pizza
This weekend we are spending with friends. I’m not sure what’s on the menu for those activities.

I need to do a bit more planning when it comes to our meals. Tuesday and Thursday We don’t get out of work until 7:30 or 8 pm sometimes.

Yes, that can be really hard. I have loved planning and cooking two meals worth at once, then having leftovers the next day when I get home late.
