Chicken is on sale. Here’s a recipe that goes right along with Frugal Townie’s Round-Up for the week of April 11th.

- Onions (Yellow)- $0.98/ 3lb bag @ Checkers
Wine & Tomato Braised Chicken

- 4 slices bacon
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp fennel seeds
- 1 tsp freshly ground pepper
- 1 bay leaf
- 1 cup dry white wine (see Tip)
- 1 28-ounce can tomatoes, with juice, coarsely chopped
- 1 tsp salt
- 10 bone-in chicken thighs (about 3 3/4 pounds), skin removed, trimmed
Step 1: Cook bacon in a large skillet over medium heat until crisp, about 4 minutes. Transfer to paper towels to drain. Crumble bacon when cool.
Step 2: Drain off all but 2 tablespoons fat from the pan. Add onion and cook over medium heat until softened, 3-6 minutes. Add the next 5 ingredients and stir for 1 minute. Add wine, bring to a boil and cook for 2 minutes, scraping up any browned bits. Finally, add tomatoes and salt.
Step 3: Place chicken thighs in a slow cooker. Sprinkle the bacon over the chicken, then pour tomato mixture over the chicken. Cover and cook until the chicken is very tender, about 3 hours on High or 6 hours on Low.

All you need is 2 c. of leftover chicken and 2 c. or leftover sauce to make a yummy Gumbo!! Good ahead and buy the red pepper on sale this week!
